Here's a variation of bar cookies which includes bananas and has walnuts not only in the bars but atop the glaze that frosts them. Placed here for safekeeping. Ingredients:
1/2 cup butter, softened |
1 1/2 cups sugar |
1/2 cup egg substitute (egg beaters) |
1 teaspoon vanilla extract |
1 1/2 cups all-purpose flour |
1/2 cup whole wheat flour |
1 teaspoon baking powder |
1 teaspoon salt |
1/2 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/8 teaspoon ground nutmeg |
1 cup banana, mashed ripe |
1/2 cup 1% low-fat milk |
1 cup walnuts, finely chopped |
1/4 cup unsalted butter, softened |
1 1/2 cups confectioners' sugar |
1 teaspoon vanilla extract |
2 -3 tablespoons boiling water |
1/2 cup walnuts, chopped |
Directions:
1. Preheat oven to 350°F (176°C); grease a 15X10X1 pan. 2. In a large bowl, cream butter and sugar until light and fluffy; Add egg substitute and vanilla. 3. Combine flours, baking powder, salt , baking soda, cinnamon and nutmeg. 4. Combine bananas and milk; add the dry mixture to the creamed mixture alternately with the banana mixture, mixing well. 5. Stir in nuts; pour the batter into the greased baking pan and bake approximately 20-25 minutes or until a toothpick inserted in the center comes out clean. 6. Cool on wire rack and while it cools make the glaze. 7. Glaze: cream the butter and sugar in a small bowl; stir in vanilla and enough of the boiling water until it reaches the desire consistency. 8. Spread the glaze over the completely cool bars and sprinkle with chopped walnuts; cut in bars to serve. 9. Do not spread the glaze over the bars if they are still warm or it will seperate; the bars must be room temperature. |
