GLAZED BAKED PAPAYA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Harrison Estate in Crandall, Texas in 1999. Ingredients:
1/4 cup butter |
1 teaspoon grated fresh ginger |
1 teaspoon ground coriander |
1/4 teaspoon curry powder |
2 tablespoons honey |
2 tablespoons fresh lime juice |
2 small firm-ripe papayas unpeeled |
Directions:
1. Preheat oven to 325. 2. In small pan combine butter, ginger, coriander and curry powder. 3. Stir over low heat until bubbly then stir in honey and lime juice and remove from heat. 4. Slice papayas lengthwise in half then remove seeds and set in baking pan cut side up. 5. Brush spice butter mixture over fruit and bake 25 minutes. 6. Baste occasionally until hot then pour remaining mixture into cavities and serve immediately. |
