A quick and easy Italian pinwheel that uses mascarpone, mozzarella and salami. These would make a great addition to a holiday party tray. Ingredients:
8oz mascarpone cheese, softened |
1 clove garlic, minced |
1/4 cup finely chopped italian olives(try to use a mix of good green, kalamata, etc) |
2t dijon |
couple dashes of hot sauce |
couple hands full fresh spinach leaves |
8oz marinated mozzarella, sliced |
8oz salami sliced thin |
flour tortillas(size and flavor are up to you... i used a tomato/basil large one and got 2 rolls, of 12 pieces, each, plus the ends |
fresh ground pepper |
Directions:
1. In small bowl, combine mascarpone, garlic, olives, Dijon, hot sauce and a lil pepper. 2. Mix well to combine. 3. Spread a thin layer onto tortillas, making sure to get nearly to the ends. 4. Top with a single layer of spinach, but make sure to cover the cheese mixture. 5. Add slices of mozzarella, but don't worry about totally covering the spinach, here. 6. Finally, top with slices of salami, and, again, make sure to go mostly to the edges, as with the mascarpone mixture and the spinach. 7. Roll into a cigar like shape. Roll it tightly, but not so tightly the filling squishes out! 8. Wrap tightly in aluminum foil and refrigerate for about 30 minutes. 9. Slice into about 3/4in rounds and serve. |
