Gingery Carrots With Raisins |

This recipe is adapted from a magazine advertisement. Ingredients:
1 pound sliced carrots (frozen slices are easy, use fresh if preferred) |
1/2 cup golden raisins |
1/2 stick butter |
1/4 cup honey |
1 tbsp lemon juice |
1/2 tsp ground ginger |
1/4 cup sliced almonds |
Directions:
1. Cook carrots in a covered saucepan in 1/2 inch of boiling water for 8 minutes then drain. 2. Combine carrots, raisins, butter, honey, lemon juice and raisins in a 1 1/2 quart baking dish. 3. Bake at 375 35 minutes uncovered, stirring a few times. 4. Sprinkle with almonds and serve. |
