From Real Simple 11/09. They suggest using Granny Smith, Braeburn, or Empire apples. Ingredients:
1 pie crust |
1/2 cup unsalted and cold butter, chopped into small pieces |
3/4 cup plus 1 tbps all-purpose flour, divided |
3/4 cup sugar, divided |
2 1/2 lbs apples, peeled and thinly sliced |
1 tablespoon fresh ginger, grated |
1/4 teaspoon ground cinnamon |
1/4 teaspoon kosher salt |
Directions:
1. Preheat oven 375° with the rack on the lowest position. 2. In a food process, pulse the butter, 3/4 cup flour, and 1/4 cup sugar until large clumps form. Transfer to a bowl and refrigerate until ready to use. 3. Place pie crust into a 9 pie plate. 4. In a large bowl, toss apples, ginger, cinnamon, salt, 1/2 cup sugar, and 1 tbsp flour. 5. Place apple mixture into pie plate, sprinkle with crumb topping and bake until golden and apples are tender, approximately 55-60 minutes. 6. Serve at room temperature. |
