I know every Irish Matron has her own recipe. this one is mine, kids really love the sweetness so It is a good way to feed them veggies Ingredients:
1 small onion, diced |
4 small carrots, chunked |
4 medium potatoes, peeled and chunked |
1 lb corned beef brisket, trimmed |
1/3 cup unsweetened apple juice |
1 head cabbage, smalle head, chopped |
2 whole cloves |
15 -20 black peppercorns |
2 cups water |
1 tablespoon brown sugar |
1 cup vegetable stock or 1 cup chicken stock |
1 teaspoon prepared mustard |
1 orange, zest of, large |
Directions:
1. Add everything in a large stockpot and boil 3-5 hours or until tender. |
