I learned to make gravy from scratch pretty early on. It is easier than most people think. Ingredients:
1 lb turkey giblets |
1 onion, peeled and halved |
2 garlic cloves, peeled |
1 carrot |
1 celery |
3 sprigs fresh sage |
1 sprig fresh tarragon |
5 cups water |
1 cup dry white wine |
1 tablespoon poultry seasoning |
1/4 teaspoon cracked black pepper |
1 cup hot water |
3 tablespoons cornstarch |
Directions:
1. Put everything except the one cup hot water and cornstarch in a large dutch oven. 2. Simmer for 3-4 hours. 3. Run liquid through a strainer and return to pan. 4. Discard solids. 5. Dissolve cornstarch in water and add to liquid. 6. Whisk constantly for three minutes or until thickened. |
