Tasty, high protein sandwich spread Ingredients:
1/2 pound extra firm tofu |
1 tbsp soy sauce |
2/3 cup peanut butter |
1 tbsp lemon juice |
1 1/2 tsp minced fresh ginger |
1 clove garlic |
2 tbsp water |
Directions:
1. Put tofu and soy into a blender or food processor and puree until a smooth paste forms. Scrape into a bowl. 2. With a fork, vigorously beat in all of the remaining ingredients. Let sit 30 minutes at room temperature before serving. |
