Delicious twist on butterniut squash soup by the addition of pear. Very tasty! Woman's Day
Ingredients:
1 onion,chopped
1 tbs grated ginger
1 large butternut squash,peeled,seeded,cut in chunks
2 ripe pears,,peeled,cored and chopped
4 c chicken broth
salt and pepper
sour cream
toasted pumpkin seeds
Directions:
1. Saute onion and ginger in a littl oil in large pot until onion is tender. Add butternut squash,pears,chicken broth and salt and pepper to taste.
2. Bring to boil;cover,reduce heat and simmer 15 mins until squash is tender. Cool slightly,then puree till smooth. Garnish with sour cream and toasted pumpkin seeds.
