Gingered Peanut Butter Cookies |

A nice variation on traditional peanut butter cookies. My Gran used to add ginger to her peanut butter snaps and I have always loved the combination. Ingredients:
1 1/4 c ap flour |
3/4 t baking soda |
1/2 t baking powder |
1/4 t salt |
1 t ginger powder |
1/4 c unsalted butter |
1/4 c vegetable shortening |
1/2 c all natural peanut butter (no sugar added please) |
1/4 c table (white) sugar |
3/4 c brown sugar |
1 t vanilla extract |
1 egg |
1 c peanut butter chips |
1/2 c chopped roasted peanuts |
1/4 c chopped candied ginger |
Directions:
1. Preheat oven to 375* 2. Combine all dry ingredients, set aside. 3. Cream butter, shortening, peanut butter and sugars. 4. Add eggs and vanilla, beat to combine. 5. Gradually add dry ingredients, stir to combine. 6. Stir in chips and candied ginger. 7. You can form these in 1 balls and crosshatch with a fork or make as drop cookies. 8. Bake for about 8-10 minutes per batch. 9. Makes about 4 dozen. |
