Gingered Pea Pods With Soy-Flavored Butter |

This was in a July 1987 issue of Bon Appetit in a Fast Summer Menus section. The menu was titled Dinner with a Chinese Accent. Ingredients:
3 teaspoons safflower oil |
1 1/2 inches piece fresh ginger, peeled and cut into thin julienne |
1 lb snow peas, strings removed |
1 tablespoon soy sauce |
1 tablespoon well-chilled unsalted butter, cut into small pieces |
Directions:
1. Heat 1 1/2 teaspoons oil in wok or heavy large skillet over medium-high heat. 2. Add ginger and stir-fry until light golden brown, about 1 minute; remove from wok. 3. Add remaining oil to wok and heat until hot. 4. Add snow peas and stir-fry until almost crisp-tender, about 3 minutes. 5. Return ginger to wok and stir-fry until heated through, about 30 seconds. 6. Transfer vegetables to serving platter. 7. Add soy sauce to wok; immediately add butter and whisk until smooth, about 30 seconds. 8. Pour over snow peas, toss well and serve. |
