Ingredients:
6 medium beets, peeled and sliced into 1/4-inch-thick slices (about 2 pounds) |
2 teaspoons olive oil |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 teaspoons grated fresh ginger |
1/4 cup orange marmalade |
1 tablespoon orange juice |
Directions:
1. Combine first 4 ingredients in a large bowl; toss gently. Set aside. 2. Combine ginger, marmalade, and orange juice in a small bowl, stirring well. Set aside. 3. Place beets in a single layer in a shallow roasting pan or jellyroll pan. Bake at 450° for 12 minutes. 4. Remove beets from oven, and brush with ginger-orange mixture. Return to oven, and bake 10 to 12 additional minutes or until tender. |
