Fast & Low Fat, Wait until your dinner is ready to go on the table before you cook these slightly crunchy nibbles. Once cooked, they soften if they're not ready to be eaten right away. Ingredients:
1 lb jerusalem artichoke |
1 tablespoon butter |
2 teaspoons grated fresh ginger |
1/4 cup marsala or 1/4 cup sherry wine or 1/4 cup apple juice |
Directions:
1. Wash & Scrub Jerusalem artichokes, slice 1/4 thick. 2. In a large skillet cook and stir artichokes in hot butter over medium heat for 5 to 6 minutes or until CRISP tender. 3. Add ginger, cook for 30 seconds, remove from heat; stir in Marsala. 4. Season to taste with salt, enjoy. |
