1 large cucumber, peeled |
3 scallions, thinly sliced |
2 teaspoons grated fresh ginger |
1 garlic clove, finely chopped |
1 tablespoon rice wine vinegar |
1 tablespoon soy sauce |
1 teaspoon sesame oil |
fresh mint leaves |
Directions:
1. Halve the cucumbers lengthwise and scrape out seeds. 2. Slice into 1/4 inch slices. 3. Combine with remaining ingredients and toss to combine flavors. Garnish with mint before serving. |
