Ingredients:
1 large cucumber, peeled
3 scallions, thinly sliced
2 teaspoons grated fresh ginger
1 garlic clove, finely chopped
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
fresh mint leaves
Directions:
1. Halve the cucumbers lengthwise and scrape out seeds.
2. Slice into 1/4 inch slices.
3. Combine with remaining ingredients and toss to combine flavors. Garnish with mint before serving.
