Adapted to serve 4 from South Beach Diet online. Phase 1. Chicken will need to marinate 30 minutes - 2 hours... not included in preparation and cooking time. Ingredients:
4 boneless skinless chicken breasts |
1 tablespoon fresh lemon juice |
1 1/2 teaspoons fresh ginger, freshly grated |
1/2 teaspoon ground pepper, freshly ground |
2 garlic cloves, minced |
Directions:
1. Combine lemon juice, ginger, pepper and garlic in a small bowl. 2. Place chicken in a deep bowl and pour ginger mixture over the breasts. 3. Turn to coat, cover, and refrigerate 30 minutes to 2 hours. 4. When ready to serve, spray large, non-stick skillet with cooking spray. 5. Heat skillet on med-high until hot. Add chicken. 6. Cook, turning once, until tender and no longer pink. Approx 8 - 10 minutes. |
