Gingered Beet And Spinach Salad |

Ingredients:
4 cups coarsely chopped fresh spinach |
2 large oranges, peeled and sectioned |
1 cup peeled and diced beet (about 2 medium) |
3 tablespoons lime juice |
1 1/2 tablespoons sugar |
1 1/2 teaspoons grated fresh ginger |
1/4 teaspoon crushed red pepper flakes |
1/4 teaspoon salt |
Directions:
1. Combine spinach, orange sections, and beets in a large bowl; set aside. 2. Combine lime juice and remaining 4 ingredients in a small bowl; stir well with a whisk. Pour lime juice mixture over spinach mixture, tossing well. Let stand 5 minutes. |
