This is a Rachel Ray 30 Minute Meal recipe. I love to serve these with hot maple syrup (the real kind) and whipped cream. Ingredients:
3 c. all-purpose flour |
4 tsp. baking powder |
2 tsp. ground cinnamon |
2 tsp. ground ginger |
1/2 tsp. freshly grated nutmeg |
1/2 tsp. salt |
4 large eggs |
2/3 c. packed dark brown sugar |
1 c. canned pumpkin puree (not flavored) |
1 1/4 c. milk |
1/2 c. molasses |
1/2 c. (1 stick) melted butter |
Directions:
1. Preheat waffle iron. 2. In a large bowl, combine flour, baking powder, cinnamon, ginger, nutmeg and salt. 3. In a medium bowl, beat eggs and brown sugar until fluffy. Then beat in pumpkin, molasses, and melted butter. 4. Stir the wet into the dry until just moist. ** Do not over-stir the waffle batter.** 5. Brush the iron with butter or spray with cooking spray and cook waffles. Note: Mine usually take about 4 minute each, but machines vary, so just keep an eye on them. |
