A simple and inexpensive light cake. Great simply dusted with icing sugar for afternoon tea, especially around Christmas time! Ingredients:
150 g plain flour |
1 teaspoon baking powder |
1 1/2 teaspoons ground ginger |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 pinch salt |
1 egg |
1/2 cup sour cream |
1/2 cup brown sugar |
1/2 cup golden syrup or 1/2 cup treacle |
125 g butter, diced |
Directions:
1. Place the wet ingredients (the second list) in the blender. 2. Blend. 3. Mix the wet stuff in a bowl with the dry stuff. 4. Don't overmix. 5. Bake in a loaf tin or a 20cm round cake tin at 180 degrees Celcius for 40 minutes. 6. Dust with icing sugar to serve. |
