According to the recipe, there are only 96 calories and 1 g of fat per pancake. (Not bad!) Ingredients:
1 1/4 cups unbleached flour or 1 1/4 cups all-purpose flour |
1 cup whole wheat flour |
2 tablespoons brown sugar |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon ground cinnamon |
1 teaspoon ground nutmeg |
1 teaspoon ground ginger |
1/2 teaspoon ground cloves |
1/2 teaspoon salt |
2 cups 2% buttermilk |
1/4 cup molasses |
2 egg whites |
Directions:
1. In a wide-mouth pitcher or large mixing bowl, combine the unbleached or all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. 2. In a small bowl, whisk together the buttermilk, molasses, and egg whites. Stir into the flour mixture just until moistened. 3. Coat a nonstick griddle or large skillet with nonstick spray and heat over medium heat. For each pancake, pour or ladle about 1/4 cup of batter onto the hot griddle. Cook for 1-2 minutes, or until the pancakes are bubbly and slightly dry around the edges. Turn over and cook briefly until golden. Serve immediately. |
