Ingredients:
1 3/4 cups flour
1/2 cup whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp pumpkin pie spice
1/2 tsp ginger
1/4 tsp soda
1/4 tsp salt
1 1/4 cups skim milk
3/4 cup applesauce
1/3 cup molasses
1/4 cup cooking oil
1 egg
softened butter
Directions:
1. in mixing bowl stir together flours, powder, pie spice, ginger, soda and salt. Make a well in the center of the flour mixture, set aside.
2. In another mixing bowl, whisk together milk, applesauce, molasses, oil, and egg. Add milk mixture all at once to flour mixture. stir....batter will be lumpy.
3. Spoon about 1/4 cup batter onto hot griddle. Cook over medium heat about 3 minutes, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
4. serve with softened butter and syrup.
