Ingredients:
1 cup all purpose flour
1 cup wheat flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp each nutmeg and ginger
2 tbsp brown sugar
1/2 cup molasses
2 eggs-separated
3 tbsp melted butter
1 cup milk
Directions:
1. preheat griddle to 375 degrees
2. mix dry together
3. mix wet together, except egg whites
4. add wet to dry, gently folding together
5. whip egg whites until stiff, fold into rest in two batches
6. cook on greased griddle until golden brown
7. serve with freshly whipped cream, powdered sugar and Maple Syrup
