For anyone that loves gingerbread as much as I do, this is a fantastic recipe to have on hand - all you need in an hurry is 3/4 cup molasses, 1 egg, beaten, and 3/4 cup boiling water and you have yourself a gingerbread, and oh, of course, the gingerbread mix!! A nice hot lemon sauce tastes just great with this also - Ingredients:
2 cups sugar |
2 tablespoons baking powder |
2 1/2 teaspoons baking soda |
4 teaspoons salt |
9 cups sifted flour |
3 tablespoons cinnamon |
3 tablespoons ginger |
1 teaspoon allspice |
1 teaspoon clove |
1 1/2 cups shortening |
Directions:
1. Sift all dry ingredients into a large bowl, cut in shortening with a pastry blender or fork as for pastry. Store in refrigerator. When ready to use spoon 2 7/8 cups of mix into a bowl, (spoon lightly). In another bowl, mix 1 beaten egg, 3/4 cup molasses, and 3/4 cup boiling water. Stir wet ingredients into dry, beat until smooth. Bake in greased 9-inch square pan for 35 minutes at 325°F 2. So delicious -. |
