Gingerbread Crepes With Maple Cream |

This dessert is wonderful as the grand finale of a fine dinner, but it can also be used as a warming, wonderful breakfast treat! Ingredients:
the crepes |
1 cup all-purpose flour |
1 cup 2% milk |
3 tbsp packed, dark brown sugar |
1/2 tsp ground cinnamon |
1/4 tsp ground nutmeg |
1/4 tsp ground ginger |
1/8 tsp ground cloves |
1/8 tsp ground allspice |
dash sea salt |
3 tbsp butter, melted |
2 large eggs |
1/2 cup club soda |
the cinnamon/orange maple syrup |
2 cups pure maple syrup |
3 strips orange peel |
2 cinnamon sticks |
the maple cream |
1 cup mascarpone cheese at nearly room temperature |
1/2 cup whipping cream |
1/3 cup cinnamon/orange maple syrup |
ground cinnamon for garnish |
Directions:
1. For crepes: 2. whisk all ingredients except the club soda 3. whisk until smooth and evenly blended 4. stir in the club soda 5. lightly grease and heat an eight inch crepe pan or other nonstick pan over medium heat 6. [ you may need to adjust the heat after the first few crepes] 7. spoon about 2 tbsp crepe mixture into the pan, and swirl to completely coat the surface of the pan 8. cook for about 2 minutes, or until the top of the crepe loses its shine 9. flip over with a spatula, or be daring and toss it in the air to turn! 10. cook about 30 seconds more 11. slide the crepe onto a parchment paper lined baking sheet, and continue repeating this cooking process until all the batter is gone 12. NOTE: 13. if preparing in advance, do not store the crepes in the refrigerator. Either leave them at room temperature, or quickly freeze. Refrigerating will only dry them out. 14. - 15. the cinnamon/orange maple syrup: 16. heat the maple syrup over low heat with orange peel and cinnamon sticks 17. cook for about 10 minutes 18. remove from heat and cool 19. chill with orange peel and cinnamon 20. the flavors will continue to infuse until ready to use 21. - 22. the maple cream: 23. beat Mascarpone cheese on low speed to soften 24. pour in the whipping cream, beating faster 25. whip until a medium peak forms 26. stir in the cinnamon/orange maple and chill until ready to serve 27. - 28. to serve: 29. heat the syrup in a large pan 30. fold crepes into quarters and place them into the warming syrup 31. let the syrup start to bubble 32. turn crepes to coat both sides 33. warm through thoroughly 34. place 2 crepes on each plate 35. spoon a generous tbsp of the maple cream on top 36. garnish with powdered cinnamon |
