Savor the flavor of your favorite holiday cookie with this too-good Gingerbread Cheesecake. Ingredients:
50 moravian spice or molasses thin wafer cookies |
1/2 c. butter, melted |
3 eggs, beaten |
3/4 c. sugar |
8-oz. pkg. cream cheese, softened |
1 t. orange zest |
2 t. orange juice |
1 c. sour cream |
1/2 c. powdered sugar |
Directions:
1. Crush cookies into fine crumbs; set aside 3 tablespoons. In a bowl, combine remaining crumbs and butter. Press into a greased 8 springform pan. Bake at 350 degrees for 10 minutes. In a large bowl, combine eggs and sugar; mix well. Fold in cream cheese, zest and juice. Spread egg mixture over baked crust. Bake at 350 degrees for 30 minutes. Cool completely. In a bowl, combine sour cream and powdered sugar; spread over baked cake. Garnish with reserved cookie crumbs. Remove from springform pan before slicing. Serves 8 to 10. |
