Gingerbread - not as in cookies - but as in bread. Enjoy! Ingredients:
1 1/2 cups flour |
1/2 tsp baking powder |
1/2 tsp baking soda |
1 tsp. salt |
1 1/2 tsp. ground ginger |
3/4 tsp. cinnamon |
1/3 cup vegetable oil |
1/2 cup brown sugar, firmly packed |
1 egg, well-beaten |
1/2 cup molasses |
1/2 cup boiling water |
Directions:
1. Sift together first six ingredients. Make a well and add first the oil, then brown sugar and lastly the egg. 2. Mix molasses and boiling water and add to batter. Beat until smooth. 3. Turn into a greased 8 inch square pan. 4. Bake in a 350ºF oven 35 to 40 minutes. |
