Ingredients:
2 tablespoons butter or margarine, softened |
1/2 cup granulated sugar |
1/4 cup applesauce |
2 tablespoons molasses |
1 cup all-purpose flour |
1/2 teaspoon baking soda |
1/8 teaspoon salt |
1 tablespoon ground ginger |
1/2 teaspoon pumpkin pie spice |
1/2 cup nonfat buttermilk |
2 egg whites |
all natural pam butter flavor cooking spray |
garnishes: lemon curd, fresh mint sprigs |
Directions:
1. Beat first 4 ingredients at medium speed with an electric mixer until blended. 2. Combine flour and next 4 ingredients; add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Add egg whites, and beat at medium speed 1 minute. Spray a 9-inch pieplate with cooking spray 5 seconds. Pour batter into pieplate. 3. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Garnish, if desired. 4. Note: Spray measuring spoon with cooking spray 1 second before measuring molasses. |
