This is the gingerbread I use in my Apple Gingerbread Bread Pudding. Ingredients:
2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
2 teaspoons ground ginger |
1 teaspoon cinnamon |
1/2 cup unsalted butter, softened |
1/4 cup granulated sugar |
1/4 cup packed brown sugar |
1 large egg |
2/3 cup unsulphured molasses |
2/3 cup milk |
Directions:
1. Preheat oven to 350°F. 2. Grease and flour a 9 x 5 loaf pan. 3. In a bowl, measure the flour, baking powder, baking soda, salt, ginger and cinnamon; set aside. 4. In a mixing bowl, beat the butter and sugars until light and fluffy on medium speed. Beat in the egg and continue beating until combined. 5. Combine the molasses and milk in a small bowl. Remove the butter mixture from the mixer. Alternate adding the flour and milk mixtures to the butter mixture. Fold the batter together with a rubber spatula. 6. Pour the batter into your prepared loaf pan. Bake for approximately 50 minutes or until done. Let cool in pan. |
