Spicy, moist cake which is why it is my all time favourite Gingerbread. It came from a Robin Hood Cookbook I got for a wedding shower present.
Ingredients:
1 3/4 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ginger
1/4 teaspoon clove
1/2 cup shortening
1/2 cup packed brown sugar
2 large eggs
3/4 cup molasses
3/4 cup boiling water
Directions:
1. Combine flour, baking powder, soda, salt and spices in a bowl mixing well to blend.
2. Cream shortening, sugar and eggs thoroughly.
3. Add molasses and mix well.
4. Add dry ingredients to molasses mixture.
5. Stir in boiling water; mix well.
6. Pour batter into greased and floured 9-inch square pan.
7. Bake at 350°F for 40-45 minutes or until toothpick inserted in centre comes out clean.
