Ingredients:
1/4 cup margarine, softened |
1/2 cup brown sugar |
1 egg, lightly beaten |
1/2 cup molasses |
2 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 teaspoon ground ginger |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/4 teaspoon ground cloves |
3/4 cup strong brewed coffee |
vegetable cooking spray |
Directions:
1. Beat margarine in a large bowl at medium speed of an electric mixer until creamy; gradually add brown sugar, beating well. Add egg, and beat well. Stir in molasses. 2. Combine flour and next 6 ingredients; add flour mixture to creamed mixture alternately with coffee, beginning and ending with flour mixture. Mix after each addition. 3. Pour batter into a 9- x 5- x 3-inch loafpan coated with cooking spray. Bake at 350° for 55 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 5 minutes; remove from pan, and let cool completely on a wire rack. |
