Ginger Spice Crunchy Granola |

Deliciously seasonally spiced crunchy granola, excellent served with vanilla yogurt, perfect for autumn and winter potluck brunches; your whole house will smell yummy! Inspired by Crunchy Granola (Crunchy Granola). Ingredients:
1 1/2 cups brown sugar |
1/2 cup orange juice |
3 tablespoons molasses |
2 teaspoons pure vanilla extract |
1 teaspoon salt |
8 cups rolled oats |
2 teaspoons cinnamon |
1 teaspoon ground cardamom |
1 teaspoon nutmeg |
1 teaspoon ground ginger |
1 cup pecans, coarsely chopped |
1 cup almonds, sliced or coarsely chopped |
1 cup dried fruits, if desired (i usually add sweetened dried cranberries) |
Directions:
1. Heat oven to 275 degrees F. 2. Line 2 cookie sheets with parchment paper. 3. Combine brown sugar, orange juice, and molasses in a large pot; stir frequently until sugar is completely dissolved. 4. Remove from heat and stir in vanilla and salt. 5. Add oats, nuts, and spices to brown sugar mixture. 6. Mix thoroughly until all oats are coated. 7. Spread onto cookie sheets and bake 40-50 minutes, stirring once, until golden brown. 8. When granola has cooled completely, add fruits if you wish and store in airtight container. |
