Delicious! Not just for salad, it makes a great dip for fresh spring rolls, too! Ingredients:
1/2 cup scallion, minced (green onions) |
1/2 cup peanut oil |
1/3 cup rice vinegar |
2 tablespoons water |
2 tablespoons fresh ginger, minced |
1 tablespoon celery, minced |
2 tablespoons ketchup |
4 teaspoons soy sauce (i prefer low-sodium) |
2 teaspoons sugar |
3 teaspoons lemon juice |
1/2 teaspoon garlic, minced |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Puree all ingredients in a blender or food processor. |
