Ingredients:
1 carton (12 oz) cottage cheese
4 tbs butter
1 clove garlic, cut into two pieces
1/2 tsp pepper
1/4 tsp ginger, ground
1/8 tsp cinnamon, ground
1/8 tsp cloves, ground
2 tbs onions, minced
1 green chili, chopped
2 tsp gingerroot
2 pounds collard greens, fresh and chopped
Directions:
1. Put cottage cheese, 2 tbs butter, garlic, pepper, ginger, cinnamon, and cloves in a bowl and stir. Preheat oven for 300 degrees. Let stand for 20 minutes.
2. Take garlic out. Cook onion, chili, gingerroot, and collard greens in 2 tbs butter in oven until tender, approximately 30 minutes. Drain. Serve collards over cottage cheese mixture.
