Women of Color Cookbook: Recipes For Your Heart and Soul, edited by Stephanie Moore. This is an unusual vegetable dish. Ingredients:
1 carton (12 oz) cottage cheese |
4 tbs butter |
1 clove garlic, cut into two pieces |
1/2 tsp pepper |
1/4 tsp ginger, ground |
1/8 tsp cinnamon, ground |
1/8 tsp cloves, ground |
2 tbs onions, minced |
1 green chili, chopped |
2 tsp gingerroot |
2 pounds collard greens, fresh and chopped |
Directions:
1. Put cottage cheese, 2 tbs butter, garlic, pepper, ginger, cinnamon, and cloves in a bowl and stir. Preheat oven for 300 degrees. Let stand for 20 minutes. 2. Take garlic out. Cook onion, chili, gingerroot, and collard greens in 2 tbs butter in oven until tender, approximately 30 minutes. Drain. Serve collards over cottage cheese mixture. |
