From Vegan With A Vengance Ingredients:
1/2 cup raisins |
1 1/2 cups whole wheat flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
2 teaspoons ground ginger |
1 teaspoon ground cinnamon |
1/2 teaspoon salt |
3/4 cup bran |
1 1/4 cups soy milk |
1/4 cup vegetable juice |
1/3 cup applesauce |
1 teaspoon vanilla extract |
1/4 cup chopped crystallized ginger |
Directions:
1. soak raisins in hot water 2. Mix together dry ingredients, create a well and add the wet ingredients. Mix together until just combined. Add raisins and crystallized ginger. 3. Fill muffin cups and bake at 400 deg. for 20 - 22 minutes until a toothpick inserted comes out clean. |
