Succulent! Ingredients:
1 lb pork tenderloin |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 teaspoon oil |
1/3 cup peach chutney (sub mango chutney) |
3 tablespoons orange juice |
1 teaspoon ginger, fresh grated |
1/2 teaspoon five-spice powder |
Directions:
1. Trim fat from loin. Cut crosswise into 8 slices. Flatten slightly with palm of hand. Sprinkle with salt & pepper. 2. Heat oil in medium skillet over medium-high heat. Cook pork about 4 minutes, turning halfway. Stir in remaining ingredients, reduce heat. Cover and simmer 4-6 minutes or until 160°. Set aside pork and continue to cook sauce for 1-2 minutes, stirring constantly. Serve over pork. |
