Ginger-Orange Glazed Cornish Hens |

From The Essential EatingWell Cookbook, page 230. Ingredients:
1 small onion, cut into 1/2-inch rounds |
1/2 large orange, cut into 1/2-inch rounds |
1 1/2 pounds cornish hen, cut in half, backbone removed (1 hen) |
1/2 tablespoon extra-virgin olive oil |
1/8 teaspoon salt |
1/8 teaspoon freshly ground pepper |
1/8 cup orange marmalade |
1 teaspoon minced fresh ginger |
1/2 teaspoon dried tarragon |
1 pinch cayenne pepper |
1 tablespoon water |
Directions:
1. Preheat oven to 450F. Coat a roasting pan or baking sheet with sides with cooking spray. Place onion and orange rounds in the pan. Place hen, skin-side up, on top; rub with oil and sprinkle with salt and pepper. Bake the hen until the juices run clear and an instant read thermometer inserted in the center of the breast registers 170F, 30 to 35 minutes. 2. Meanwhile, combine marmalade, ginger, tarragon and cayenne. Remove hen from oven. Set oven to broil and place a rack 6 inches from the heat sources. Brush hens with marmalade mixture. Broil until glaze is lightly browned, 2 to 3 minutes. 3. Remove hen to a serving platter or plate. Remove all but one orange slice from the pan and place over medium heat. Add water and bring to a simmer, using the orange slice as a spatula to scrape up any browned bits. Pour this sauce over the hen. |
