Ginger-orange Butter Broccoli With Cashews |

Here's an easy fuss-free side dish that tastes and looks special. If you're not a fan of broccoli, you can use the sauce with other veggies such as sugar snap peas, green beans, carrots, etc. Ingredients:
1 pound fresh broccoli, cut into spears |
2 tablespoons orange marmalade |
1 tablespoon butter |
1/2 teaspoon rice vinegar |
1/8 teaspoon ground ginger |
cashew halves for garnish |
Directions:
1. Cream together softened butter, orange marmalade, vinegar, and ginger. Set aside. 2. Saute broccoli in olive oil and a small amount of water until bright green and crisp-tender, (Or boil and/or steam if you prefer.) Drain well. 3. Add butter mixture to the broccoli and toss until the butter is melted and the broccoli is completely coated with the sauce. 4. Garnish with cashews and enjoy! |
