This is for ginger lovers! Good for breakfast with fruit, or packed in the lunchbox.
Ingredients:
1/4 cup butter or 1/4 cup margarine, softened
1/4 cup granulated sugar
1 egg
1/2 cup molasses
1/4 cup hot water
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon clove
1/4 cup hot water
Directions:
1. Combine butter, sugar, egg, molasses and first amount of hot water in mixing bowl.
2. Beat together well.
3. Measure next 6 ingredients into same bowl.
4. Stir.
5. Gradually stir second amount of hot water into batter.
6. Fill greased muffin cups 3/4 full.
7. Bake in 400 degree oven for 20-25 minutes until toothpick comes out clean.
8. Cool in pan 5 minutes, then remove.
