This is for ginger lovers! Good for breakfast with fruit, or packed in the lunchbox. Ingredients:
1/4 cup butter or 1/4 cup margarine, softened |
1/4 cup granulated sugar |
1 egg |
1/2 cup molasses |
1/4 cup hot water |
1 3/4 cups all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon ginger |
1/4 teaspoon clove |
1/4 cup hot water |
Directions:
1. Combine butter, sugar, egg, molasses and first amount of hot water in mixing bowl. 2. Beat together well. 3. Measure next 6 ingredients into same bowl. 4. Stir. 5. Gradually stir second amount of hot water into batter. 6. Fill greased muffin cups 3/4 full. 7. Bake in 400 degree oven for 20-25 minutes until toothpick comes out clean. 8. Cool in pan 5 minutes, then remove. |
