8 cups chopped ripe mangoes |
1 ounce fresh ginger, sliced thinly |
1/2 cup lime juice |
5 cups sugar |
Directions:
1. Cook all ingredients in a heavy saucepan, boiling rapidly and stirring occasionally until thickened. 2. Ladle into prepared jars leaving a 1/4 headspace. Process in a boiling water bath for 10 minutes. Adjust time according to your altitude. |
