A light sweet and sour dressing perfect with a salad sporting fruit. Ingredients:
2 tbsp apple cider vinegar |
2 tbsp dijon mustard |
2 tbsp honey |
1 tsp ginger root |
2 tbsp lime juice raw |
2 tbsp extra virgin olive oil |
Directions:
1. To get a good mix on this I recommend mixing each ingredient to the next individually. 2. Mix honey and vinegar then add Dijon mustard and mix again until all is completely integrated. 3. Peel about an 1/2 inch of ginger root then slice the root thinly. Put the thin slices in a garlic press and press into the mixture. Blend well. 4. I used 1/2 of a fresh lime and squeezed all the juice in then. 5. Using a zester or grater, grate the lime rind into the dressing. Blend well. 6. 1 tablespoon at a time add the oil and blend well. 7. Refrigerate and make sure to shake well before using. |
