This is a nice, refreshing way to serve carrots Ingredients:
1 1/2 lbs carrots, peeled and trimmed, sliced (or use baby carrots) |
2/3 cup water |
2 tablespoons butter |
1 teaspoon sugar |
1 teaspoon salt, more if needed |
2 teaspoons ginger, minced |
1 1/2 teaspoons cilantro, chopped |
Directions:
1. Put the carrots in a large skillet and add the water, butter, sugar and salt; bring to a boil over high heat. 2. Cover the pan with the lid slightly askew, reduce the heat to medium heat and cook at a steady boil, shaking the pan occasionally until the carrots are tender ; 7 - 9 minutes. 3. Uncover, stir in the ginger and continue to boil until the liquid evaporates to create a syrup. Shake the pan and roll the pieces around to evenly glaze the carrots. 4. Add a pinch more salt if needed, toss with the cilantro and serve. |
