This is one of the many varaiated vegetable side dish i like to do for my BBQ'S.. Ingredients:
1/4 cup fresh ginger puree |
1/2 cup olive oil |
3 tbsp minced garlic |
1 bundle asparagus bottoms trimed off |
2 red bell peppers cut in to 1in. strips lengthwise |
1/2 lbs of your favorite mushrooms |
2 red onions pealed slicing crosswise in to 1/2 in. onion ring disks |
1 bunch broccoli florets |
salt & pepper to taste |
Directions:
1. Peal the Ginger, Chop and puree in food processor or blender along with the Olive Oil,Garlic and Salt /Pepper 2. Arrange Vegetables on a large cookie sheet or platter 3. Pour the Ginger puree over the vegetables making sure all are evenly coated 4. Marinate for at least 4 hours in Refrigerator (over night works best) 5. Light Charcoal BBQ and bring to temp 6. BBQ Vegetables till tender crisp and Onions are nice and caramelized... |
