This is one of the many varaiated vegetable side dish i like to do for my BBQ'S..
Ingredients:
1/4 cup fresh ginger puree
1/2 cup olive oil
3 tbsp minced garlic
1 bundle asparagus bottoms trimed off
2 red bell peppers cut in to 1in. strips lengthwise
1/2 lbs of your favorite mushrooms
2 red onions pealed slicing crosswise in to 1/2 in. onion ring disks
1 bunch broccoli florets
salt & pepper to taste
Directions:
1. Peal the Ginger, Chop and puree in food processor or blender along with the Olive Oil,Garlic and Salt /Pepper
2. Arrange Vegetables on a large cookie sheet or platter
3. Pour the Ginger puree over the vegetables making sure all are evenly coated
4. Marinate for at least 4 hours in Refrigerator (over night works best)
5. Light Charcoal BBQ and bring to temp
6. BBQ Vegetables till tender crisp and Onions are nice and caramelized...
