Ingredients:
1 fresh pineapple, peeled, cored, and cut into 1-inch pieces
6 large seedless oranges, peeled and sectioned
1 cup grated coconut
1 tablespoon finely chopped gingerroot
2 teaspoons grated orange rind
3/4 cup orange juice
1/4 cup cointreau or other orange-flavored liqueur
Directions:
1. Combine all ingredients; toss lightly. Cover and chill. Spoon into individual serving bowls.
