Ginger date muffins in caramel sauce. Lovely muffins recipe I found in women's weekly Ingredients:
1 cup dates, coarsley chopped and seeded |
80 ml water |
1/4 teaspoon bicarbonate of soda |
2 cups self raising flour |
1 cup plain flour |
2 teaspoons ground ginger |
1/2 teaspoon mixed spice |
1 cup brown sugar, firmly packed |
2 teaspoons orange rind, grated |
1 egg, beaten |
310 ml milk |
60 ml vegetable oil |
caramel sauce |
1 cup brown sugar, firmly packed |
1 cup cream |
40 g butter |
Directions:
1. Preheat oven to moderately hot. 2. grease a 12 hole muffin pan. 3. Combine dates and the water in a medium saucepan, bring to the boil. 4. remove from heat and add soda, then stand for 5 minute. 5. sift dry ingredients into a large bowl, stir in date mixture and then the remaining ingredients. 6. spoon mixture into prepared pan. 7. Bake in oven for about 20 minute. 8. Caramel sauce. 9. combine ingredients in a bowl and stir over heat without boiling, until sugar dissolves. 10. Simmer without stirring for 3 minute or until thickened slightly. 11. Serve with the muffins. |
