Ginger, Curry, Apple, and Butternut Squash Soup |

Ingredients:
2 tablespoon(s) butter |
1 whole(s) small-medium onion chopped |
2 inch piece of fresh ginger diced |
1 large garlic clove sliced |
1 whole(s) medium butternut squash 2 inch cubes |
2 whole(s) sweet apples peeled and cored |
1 teaspoon(s) mild curry powder |
1/2 cup(s) frozen apple juice undiluted |
1/4 cup(s) light cream |
4 cup(s) water or vegetable broth |
Directions:
1. Melt butter in a large pot 2. Add onion and cook for about 2min 3. Add ginger and garlic and cook for another 4 minutes 4. Add curry powder and mix 5. Add water or broth 6. Add squash and apple 7. Add apple juice 8. Cover, bring to a boil, then cook on medium-low for 25 minutes (or when squash is soft) 9. Puree soup in batches, put back in pot and add cream |
