I Love ginger and I love scones, this in my old files and I want to use up some crytalized ginger. Note there are no eggs in the recipe And of course one can cut these into wedges instead of individual circles These are tender and melt in your mouth when warm from the oven! Read more ! Ingredients:
2 cups flour |
6 tablespoons sugar |
1 tablespoon baking powder |
1/4 teaspoon salt |
1 1/3 cups whipping cream |
1/4 cup minced crystallized ginger, use more if you like |

1/3 cup melted butter |
1/2 cup packed brown sugar |
Directions:
1. Preheat oven to 350 degrees. 2. Grease baking sheet; set aside. 3. Into medium bowl, sift together flour, sugar, baking powder and salt. 4. In small bowl, combine ( gently beat ) cream; with ginger. 5. Fold liquid into dry ingredients; knead briefly to form dough that clings together 6. Shape dough into eight 3 1/2 by 1/2 inch rounds on prepared baking sheet. 7. Brush tops liberally with melted butter and sprinkle heavily with brown sugar. 8. Bake 12 to 14 minutes, or until golden brown around edges. 9. Makes 8 scones. 10. Notes: 11. May also be formed into one large circle, cut into 8 wedges , but baking time would be increased 12. Freeze leftovers, if there are any left! 13. And if you don't like ginger, just sub dried cranberries, blueberries , apricots , cherries etc , etc. |
