From Elsa's Cookbook by Elsa Sandersen Ingredients:
2 cups sifted flour |
1 teaspoon baking powder |
1 teaspoon powdered ginger |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
2 tablespoons brown sugar |
1 tablespoon molasses |
1 egg |
1 cup milk |
4 tablespoons melted shortening |
1 stiffly beaten egg white |
1/2 teaspoon powdered ginger |
1 tablespoon sugar |
1 tablespoon flour |
Directions:
1. Sift together flour, baking powder, ginger, soda, salt and sugar. 2. Add molasses. 3. Beat egg, add milk, and add to first mixture. 4. Add melted shortening. 5. Pour into greased muffin pans. 6. Top with topping mixture and bake in hot oven (400) for 25 minutes. |
