Ginger Cookies, these are scrumptious. Even this 52 cookie recipe will not last long, you can not eat only one. LOL Ingredients:

6 tbs. margarine, softened |
2/3 cup sugar |
1/4 cup molasses |
1 lg. egg |
2 cups all-purpose flour |
2 tsp. baking soda |
1 tsp. ground ginger |
1 tsp. ground cinnamon |
1/2 tsp. mace |
3 tbs. sugar |
non-stick cooking spray |
Directions:
1. 1)Cream margarine; gradually add 2/3 cup sugar, beating at medium speed of a mixer until light and fluffy. Add molasses and egg; beat well. 2. 2)Combine flour and the next 4 ingredients; gradually add to creamed mixture, stirring until well blended. Divide dough in half; wrap each portion in plastic wrap. Freeze for 30 minutes. 3. 3)Preheat oven to 350º. 4. 4)Shape each portion of dough into 26 ( 1-inch ) balls; roll in remaining 3 Tbs. sugar. Place balls 2 inches apart on baking sheets coated with cooking spray. Bake at 350º for 12 minutes or until lightly browned. Remove from baking sheets; let cool on wire racks. |
