Ginger-cilantro Rice

This is an easy tasty side. It goes great with grilled chicken or shrimp.
Ingredients:
1 cup long-grain rice
2 (1 inch pieces) fresh ginger, cut into 1/4 inch slices plus 1 teaspoon minced
1 3/4 cup low-sodium chicken broth
1 1/3 cups chopped fresh cilantro
1 green onion, thinly sliced
2 tablespoons extra-virgin or grapeseed oil
1 teaspoon sesame oil
1 teaspoon unseasoned rice vinegar (or to taste)
Directions:
1. Combine the rice and ginger rounds in a large saucepan. Add broth and a dash of salt. Bring to a boil, stir; cover and reduce heat to low. Simmer until the rice is tender and the liquid has been absorbed.
2. Meanwhile, combine the cilantro, green onion and minced ginger in the work bowl of a mini food processor. Add the oils and the vinegar, process until almost smooth. Taste and season with salt and pepper.
3. When the rice is cooked, stir in the cilantro mixture. Serve.
