Ginger Chicken Soup

Ingredients:
2 quarts chicken stock, preferably home made
6 chicken legs, deboned
1 piece ginger, finely diced
6 cloves finely diced garlic
2 tablespoons butter (optional)
1 whole onion, diced
1 1/2 cups diced mushrooms
2 tablespoons olive oil
salt & pepper
4 tablespoons lemon juice
1/2 cup diced scallion
1/2 cup diced shallot
3 tablespoons soy sauce
french bread
Directions:
1. Take the Onion,garlic,scallions,shallots,P‚ lemon juice.
2. Sweat in the butter and olive oil.
3. Place in chicken pieces and stock and bring to a boil.
4. Reduce heat and add salt and pepper.
5. Simmer for 2 hours.
6. Place in bowl over slice of french bread drizzle olive oil and soy sauce.
7. Enjoy!
