                    Something a little different, but a welcome change from the same old sides. Ingredients: 
                    
                        
                                                6 medium carrots  |  
                                                2 tsps lemon juice  |  
                                                3/4 tsps salt  |  
                                                1/2 tsps ground ginger  |  
                                                dash of pepper  |  
                                                2 tbs margarine/butter  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Peel carrots; cut into 1/2 inch slices. 2. Place in buttered 1 qt casserole. 3. Mix juice and seasonings; pour over carrots. 4. Dot with margarine/butter and bake covered at 400 for 1 hour, or until tender.                              |
